What Is Biodynamic Farming?

Biodynamic agriculture is a holistic farming system developed in the 1920s by Austrian philosopher Rudolf Steiner. While it shares organic farming's prohibition of synthetic chemicals, biodynamics goes considerably further β€” treating the farm as a self-sustaining organism, following astronomical rhythms for planting and harvesting, and using specific herbal preparations to enhance soil vitality.

In the wine world, biodynamic viticulture has moved from the margins to the mainstream. Some of the world's most prestigious estates β€” Domaine de la Romanee-Conti, Domaine Leroy, Zind-Humbrecht, Nikolaihof, and Felton Road β€” farm biodynamically. Whether their wines are great because of biodynamics, or despite its more esoteric aspects, is a matter of ongoing debate. What is beyond debate is that these estates produce extraordinary wines while maintaining exceptional vineyard health.

How Biodynamics Differs from Organic

Both organic and biodynamic farming prohibit:

  • Synthetic pesticides and herbicides
  • Synthetic fertilizers
  • Genetically modified organisms (GMOs)

Where biodynamics goes further

1. The farm as organism

Biodynamics views the farm β€” not just the vineyard β€” as a living organism. Every element is interconnected: the soil, plants, animals, compost, and the farmer are all part of a single system. Biodynamic farms aim to be as self-sustaining as possible, producing their own compost and keeping animals whose manure feeds the soil.

2. The preparations

Biodynamic farming uses nine specific preparations, numbered 500 through 508, made from herbs, minerals, and animal materials:

  • Preparation 500 (Horn manure): Cow manure packed into a cow horn, buried over winter, then diluted and sprayed on soil to stimulate root growth and microbial activity
  • Preparation 501 (Horn silica): Ground quartz crystals packed into a cow horn, buried over summer, then diluted and sprayed on leaves to enhance light metabolism and fruit quality

These preparations are applied in very small quantities β€” more like homeopathic treatments than conventional applications. Skeptics point out that the quantities are so small they cannot have measurable chemical effects. Proponents argue that the preparations work dynamically, stimulating biological processes in ways that conventional chemistry does not measure.

3. The cosmic calendar

Biodynamic farming follows an astronomical calendar that divides days into four categories based on the moon's position relative to the constellations:

  • Root days: Best for pruning and working the soil
  • Fruit days: Best for harvesting grapes
  • Flower days: Best for leaving the vineyard alone
  • Leaf days: Best for watering

Biodynamics provokes strong opinions because it mixes demonstrably beneficial practices with elements that have no scientific basis.

  • Compost and cover crops build soil organic matter, improve water retention, and support microbial ecosystems
  • Reduced yields (a common result of biodynamic farming) typically improve grape concentration and wine quality
  • Attention and observation: Biodynamic protocols require farmers to spend more time in the vineyard, which means problems are caught earlier

What science does not support

  • Homeopathic preparations: The quantities used are so diluted that they have no measurable chemical impact. There is no peer-reviewed evidence that horn manure or horn silica work via any mechanism not explained by conventional compost application.
  • Astronomical calendar: No controlled study has demonstrated that the moon's position relative to constellations affects plant growth or wine quality.

The counter-argument

Biodynamic proponents respond that modern science is not equipped to measure what biodynamics does. They point to the undeniable health of biodynamic vineyards β€” deeper root systems, more diverse soil life, healthier vine canopies β€” as evidence that the system works, even if the mechanism is not fully understood.

A pragmatic view: the beneficial practices in biodynamics (organic farming, composting, biodiversity, attentive viticulture) are well-supported by science. If the more esoteric elements motivate farmers to implement these practices with greater rigor and commitment, the net result is positive, regardless of whether horn manure works as a preparation or simply as well-aged compost.

Does Biodynamic Wine Taste Different?

This is the question that matters most to wine drinkers. The honest answer: it depends.

What biodynamic advocates claim

  • Greater sense of terroir and "transparency" β€” the wine tastes more of its place
  • More vibrant fruit and freshness
  • Better aging potential
  • A "life force" or energy in the wine that is difficult to articulate but perceivable

What objective tasting suggests

  • Wines from biodynamic estates are, on average, of very high quality β€” but this likely reflects a selection bias (producers committed enough to farm biodynamically tend to be serious about quality in all aspects)
  • Blind tastings rarely distinguish biodynamic wines from well-made organic or conventional wines of similar quality
  • The most demonstrable quality differences come from practices shared with organic farming (lower yields, healthier soils) rather than biodynamic-specific preparations

Certification: Demeter and Biodyvin

Two organizations certify biodynamic wines:

Demeter International is the primary biodynamic certification body, with standards covering the entire farm (not just the vineyard). Demeter certification requires:

  • Full compliance with biodynamic methods for at least three years
  • Use of all nine preparations
  • Minimum 10% of farm area devoted to biodiversity (hedgerows, forests, wetlands)
  • Annual inspection

Biodyvin is a smaller organization of biodynamic wine estates, predominantly French, that certifies specifically for viticulture rather than whole-farm practice.

Not all biodynamic producers seek certification. Some follow biodynamic practices without the cost and bureaucracy of formal certification. Domaine de la Romanee-Conti, for instance, is biodynamic but does not carry certification.

Should You Seek Out Biodynamic Wine?

Biodynamic certification is neither a guarantee of quality nor a prerequisite for it. Many excellent wines are biodynamic; many more excellent wines are not. What biodynamic farming does reliably deliver is vineyard health, biodiversity, and environmental stewardship β€” values worth supporting regardless of your position on cosmic rhythms and horn preparations.

If you are curious, start with established biodynamic producers and taste their wines alongside conventional and organic wines from the same regions. Your palate is the best judge of whether the difference matters to you.
